Zucchinis aka courgettes (if you’re fancy) are a variety of squash which can be found all year round. They are well reputed for being budget-friendly and versatile, making them a perfect ingredient to use for those on a budget!
Storing your zucchini
- Zucchinis should be stored in the fridge when not being used immediately. It is best to store them whole, dry and unwashed in a plastic or paper bag. This is to ensure air circulation which will keep them fresh for 1-2 weeks.
- To store them for longer periods you can either blanch or grate them and they can last around 3 months in the freezer - blanching slows down the activity of enzymes so that your zucchini lasts longer!
- To store them in the freezer:
- Wash and slice zucchini into rounds
- Toss them into salted boiling water for 1-2 minutes
- Drain in a colander and transfer them in freezer bags
- If storing raw, simply grate them and pack in a plastic bag
Signs it has gone bad
It's pretty easy to tell if a zucchini has gone bad.
The main sign to look out for is that it will feel rubbery and/or slimy to the touch.
It might also give off a bad smell and show signs of mould growth.
Even if the exterior of the zucchini looks good, be sure to check the insides for stringy, mushy flesh with an off-white or brownish colour!
Cleaning and prepping your zucchini

It is best to give them a rinse under cold water and use your fingers to rub off any dirt or soil. Don't use a course scrubber or brush since the exterior of the vegetable is quite soft!
