INSTRUCTIONS
1. | Sauté and season with salt ½ chopped onion, 1 mushroom and ¼ tomato in either separate pans or once done, move each ingredient to a plate. |
2. | Coat pan lightly in oil and place tortilla in. |
3. | Crack the egg onto one half of the tortilla, keeping the heat about medium. |
4. | Place the vegetables over the cracked egg. |
5. | Fold the tortilla in half. |
6. | Flip the tortilla once each half starts to meld together and so one side does not burn more than the other. |
7. | Serve! |
