Laissez-faire started off in 1989 and has become one of Sydney's best-known caterers.
We talked to the team about what makes them tick, a large part of which turns out to be sustainability, having created a trademarked philosophy to raise awareness of their operational principles.
RH: How would you describe Laissez-Faire's approach to food?
LF: We only source fresh, local seasonal produce and with this, we’ve been able to create innovative menus. Our chefs and wait staff strive to offer the extraordinary, through creative cuisine, suburb service and attention to detail.
We’re also conscious of sustainability in the industry. With so many events going on in Sydney, it’s important for a company like ours to be responsible for how we operate. We innovate with waste management techniques, working in collaboration with suppliers, venues and clients to positively impact our local community and reduce our footprint. We developed the Foodified™ philosophy to raising awareness of the fundamental principles of our operations.
RH: What tips do you have for event organisers when briefing their caterer?
- LF: Share your ideas! We want to know what you think will work for your event.
- Trust us with the food. We are great at putting together a menu for any event. If you’re not sure what you want served at the event, we’ll come up with something great.
- Talk about specifics. Tell us what you imaging the table settings will look like, how long you want the event to run, where you want it to be, who you’re inviting and why the event is important.
RH: What is your favourite dish on your menus?
Our chef cooks up a Cape York Barramundi fillet with artichoke lemon basil puree and it is delicious! Our desserts are great too and we’re always coming up with new ones.
RH: What are you most looking forward to, working with Roundhouse and our clients?
LF: Roundhouse is in a great location and there’s huge potential for different types of events to be hosted there. The venue itself is new and exciting so we cannot wait to see it all come to life!
